Morels and lines represent peculiar "snowdrops" in a mushroom kingdom which appear on spring very first of all edible fungi.
Lines appear a little earlier and grow in parks, steppes, but most often meet on cuttings down in coniferous forests, garyakh and glades. On time emergence of strochok under natural conditions coincides with blossoming of a medunitsa.
Emergence of morels happens a little later when the deciduous woods are completely exempted from snow. Favourite places of morels are thickets of an osier-bed and slopes of ravines.
Morels concern to representatives of a sort of mushrooms from family morshellovy or smorchkovy, having a hat appearance on a large leg. The body has silnoporisty structure, in coloring of a hat brown color most often prevails. The morel belongs to conditionally edible fungi, but use it in food demands a certain heat treatment.
Lines belong to a genus of marsupials of mushrooms from family strochkovy and which often take for edible morels. Lines in the raw possess deadly virulence, but appropriate culinary processing allows to eat them. Lines differ in hats, having mozgovidno a twisting surface with partially grown edges. Quite often all types and sorts of strochok are called morels.
Morels the presents, morels steppe, hats smorchkovy and lines ordinary, growing in pine pine forests are the most widespread. These species of mushrooms are usually used in food.
Morels ordinary are decorated with the hollow hat of light brown color and an ovoid form having a mesh and cellular surface. The sizes of a hat can reach in height to six centimeters and in the diameter up to seven centimeters. A fruit body of a mushroom in the form of a leg of the cylindrical form of white color reaching to 10 centimeters in height and to 4 centimeters in thickness. The mushroom has wax-like pulp, gentle fragile white color and with a pleasant smell. Fructification happens from April to May.
Morels conic differ in the hat with the pointed top painted in black-brown, gray-green or gray-brown colors. The hat has a ridge and cellular surface with the cells in the form of the extended rhombus divided among themselves by partitions of dark color. The pulp of a mushroom does not differ in a special smell.
Lines huge differ in very large fruit body reaching in height to 16 centimeters and in width to 30 centimeters, with the hat of a shapeless look having a hairy and folded surface with an okhryano-brown or light-brown color.
Reckoning of strochok and morels to conditional edible fungi is explained by availability of toxins in them: gelvellovy acid and girometrin. Poisoning with gelvellovy acid leads to violation of activity of kidneys, and at the use of strochok in number of 400 grams there comes the lethal outcome.
At the use of strochok in food it is necessary to boil them in boiled water not less than 10 minutes that leads to dissolution of toxins in water. Then broth merges, and mushrooms are washed out then they are suitable for the use in food.
